We Made Bacon Dumplings!

Oh boy! These dumplings would be a great appetizer or as soup or stew! Here's how we made ours:




INGREDIENTS:

  • 4-6 slices of bacon (save a few for garnish)

  • 2 cups of all purpose flour

  • Dash of salt

  • 1 1/2 Tbsp baking powder

  • 1 Tsp dry parsley flakes

  • 2 eggs

  • 1/4 cup of milk

  • 1 quart of vegetable broth

  • Dash of pepper

  • Parsley sprig or two


INSTRUCTIONS:

  1. Fry your bacon, remove and let drain on a paper towel. Reserve the bacon drippings!

  2. Take a bowl and sift the flour, salt and baking powder.

  3. In a measuring cup, beat the two eggs. Then add the milk.

  4. Stir the egg/milk mixture and the bacon drippings into the flour.

  5. Blend and add the crumbled bacon. If the mixture gets too dry, it's ok to add more milk.

  6. Pour the vegetable broth into a pan and let it come up almost to a boil.

  7. Drop SMALL scoops of the dough into the broth.(They will expand a lot!)

  8. Cover and let simmer on med-low heat in the broth for about 12 minutes or until done.

  9. When done, scoop the dumplings into a bowl. For more of a soup you can transfer more of the broth into the bowl.

  10. Garnish with chopped fresh parsley and more bacon bits!

Serve and enjoy!
