How to Make Bacon Potato Soup

It's getting to be the perfect time for comfort foods! This loaded bacon potato soup will be a crown pleaser. Try it!



INGREDIENTS:

  • 8 strips of bacon

  • 8 red (or your favorite type of) potato

  • Half a large onion

  • 1 can of evaporated milk

  • 1 cup of whole milk

  • 2 cups of chicken broth

  • green onions for garnish

  • 2 garlic cloves

  • sour cream

  • salt and pepper


DIRECTIONS:

  1. In a soup pot, fry up the bacon (you can pre chop if you like)

  2. When bacon is done, leave some drippings in pot and blot bacon on paper towel

  3. Dice your onions and garlic and saute in the soup pot after bacon is out

  4. Add 2 cups of chicken stock and bring to a boil. Reduce and simmer for 15 minutes or so

  5. Slice and add your potato slices

  6. Keep simmering another 10 minutes or so

  7. Add the can of evaporated milk and whole milk

  8. Simmer and add the cheese and bacon bits

  9. Add some salt and pepper

  10. Simmer another 10-15 minutes but keep stirring!

  11. Once done you can ladle it out into a soup bowl and garnish with a dollop of sour cream, sprinkle green onions, sprinkle more cheese and bacon bits on top.


Serve and enjoy!
