Bacon Wrapped Chicken Parmesan Muffins

This recipe is a family favorite! Only made better by wrapping each muffin with bacon. Tastes just like chicken parmesan and so simple to make! Here's how:


  • 1 pound of ground chicken

  • 9 - 12 strips of bacon

  • 1 egg

  • 1/3 cup of panko or breadcrumbs

  • 1 Tsp of olive oil

  • 2-3 garlic cloves

  • 1 onion

  • 1 Tsp basil

  • 1/2 Tsp thyme

  • 1/2 Tsp salt

  • 1/2 Tsp black pepper

  • 2/3 cup grated parmesan

  • Smoked mozzarella (cut into cubes)

  • Some marinara


  1. Preheat oven to 350 degrees. Grease a muffin tin and set aside

  2. Cut the strips of bacon to fit inside the muffin tin

  3. Place in oven for 20-30 minutes. Remove when done to your liking.

  4. Chop your garlic and onions and sauté in a pan

  5. In a bowl, combine the chicken, egg, breadcrumbs, onion/garlic mixture, dried herbs, salt & pepper and 1/2 cup of parmesan. Mix well.

  6. Cut the smoked mozzarella into cubes

  7. Fill each muffin section half way with the meat mixture.

  8. Place the mozzarella cube into each muffin section.

  9. Place more meat mixture on top to complete muffin

  10. Smear the marinara on each muffin and sprinkle with remaining parmesan.

  11. Place in oven for 25 or 30 minutes or until cooked.

Serve and enjoy!


You may need to blot the bacon grease out of each muffin section during the baking or right after removing from oven. Just check on them.
