Bacon Wrapped Chicken


Great blend of flavors with chicken, cheese, spinach, sun dried tomato and of course, bacon!


INGREDIENTS:

  • Boneless chicken breasts

  • 1 lb of bacon

  • Boursin cheese

  • Sundried tomatoes

  • 2-3 garlic cloves

  • 3-4 cups of spinach

  • Wood toothpicks

INSTRUCTIONS:

  1. Pre-heat oven to 375 degrees

  2. Cook bacon until it's slightly cooked but still pliable. Put on paper towels

  3. Reserve 1 Tbsp of bacon grease in pan

  4. Add minced garlic and spinach to pan. Wilt spinach

  5. Put chicken breasts in plastic wrap and flattnen the beasts

  6. Once flat, spread the cheese over the breast

  7. Add the wilted spinach/garlic mix

  8. Add some sun dried tomatoes

  9. Fold the breast in half and wrap the breast with your bacon

  10. Secure with toothpicks if needed/desired

  11. Place the breasts in a greased baking dish

  12. Bake for 30 minutes

  13. Put the oven on broil for the last 5 minutes to crisp up the bacon

  14. Remove from oven and place on platter


Cool, serve and enjoy!
