Great blend of flavors with chicken, cheese, spinach, sun dried tomato and of course, bacon!
INGREDIENTS:
Boneless chicken breasts
1 lb of bacon
Boursin cheese
Sundried tomatoes
2-3 garlic cloves
3-4 cups of spinach
Wood toothpicks
INSTRUCTIONS:
Pre-heat oven to 375 degrees
Cook bacon until it's slightly cooked but still pliable. Put on paper towels
Reserve 1 Tbsp of bacon grease in pan
Add minced garlic and spinach to pan. Wilt spinach
Put chicken breasts in plastic wrap and flattnen the beasts
Once flat, spread the cheese over the breast
Add the wilted spinach/garlic mix
Add some sun dried tomatoes
Fold the breast in half and wrap the breast with your bacon
Secure with toothpicks if needed/desired
Place the breasts in a greased baking dish
Bake for 30 minutes
Put the oven on broil for the last 5 minutes to crisp up the bacon
Remove from oven and place on platter
Cool, serve and enjoy!
