Bacon Sriracha Potato Salad Recipe

This is an easy and delicious potato salad with a kick! You can dial the heat up or down. Your choice! You need to try this!


  • 1 pound of red potatoes (original recipe calls for 3 pounds, so adjust)

  • 4 slices of black pepper bacon (or your favorite)

  • 1 Tbsp white vinegar

  • 1/8 Tsp salt

  • 1/2 cup mayo

  • 1/8 cup sour cream (can substitute with greek yogurt)

  • 1 Tbsp sriracha sauce

  • 1 green onion

  • Smoked paprika (to taste)


  1. Wash and place potatoes in a pot of boiling water

  2. Boil for 8 minutes or until fork tender

  3. Fry or bake your bacon - when done set aside to cool

  4. When potatoes are done, drain and pour the vinegar and salt on them

  5. Set potatoes aside and let cool, then slice into bite sized pieces

  6. Next make the dressing;

  7. In a bowl mix the mayo, sour cream and sriracha

  8. When bacon is cool, chop it up

  9. Slice the green onion

  10. When potatoes are cool, combine the dressing - fold it in

  11. Then mix in your bacon, green onions and sprinkle the smoked paprika on top.

Serve and enjoy!
