Bacon Shrimp Corn Chowder


This is a hearty meal that will make you smile! Quite simple to make and gives your everyday corn chowder a surf n turf twist!



INGREDIENTS:

  • 5 or 6 slices of smoked bacon

  • 2 cups of diced yellow onions

  • 1 Tbsp of fresh garlic

  • 1 Tsp of smoked paprika

  • 1/2 Tsp of thyme

  • 1/2 Tsp of parsley flakes

  • Sprinkle of crushed red pepper flakes (more if you like spicy)!

  • 2 1/2 cups of frozen corn

  • 3 cups of chicken broth

  • 1 cup of half and half

  • Salt & pepper taste


INSTRUCTIONS:

  1. Fry the bacon and remove to drain grease. Leave Tbsp of drippings in pot.

  2. After bacon is cool - break up into small pieces.

  3. Add the shrimp and cook until pink. Remove and drain off fat. Keep drippings in pot.

  4. Add the onions and garlic and sautee until translucent.

  5. Then add your dry seasonings and mix/stir.

  6. Then add the frozen corn, chicken broth and half & half.

  7. Bring to a boil, reduce heat and let simmer for 15 minutes.

  8. If you have an immersion blender use it on half the soup. If not, just take 2 cups and put in a blender and pulse. Hold the lid so you do not get boiling soup on you!

  9. Add your shrimp back to the chowder and serve.

  10. Garnish with your bacon! ENJOY!
