Ingredients:
1 pound of smoked bacon
1 medium red onion
3-4 garlic cloves
1/4 cup balsamic vinegar
1/4 cup apple cider vinegar
1/3 cup brown sugar
1/2 cup maple syrup
2 cups of beef broth
1 Tsp smoked paprika
Salt and pepper to taste
DIRECTIONS
Cut bacon into 1 inch strips and start frying
Once almost done - remove bacon and reserve 1 Tbsp of bacon fat
Saute onions until translucent, then add minced garlic
Add the Balsamic and apple cider vinegar - keep stirring
Add the brown sugar and smoke paprika
Add the bacon back to your pan
Add 1 cup of the beef broth - stir, reduce heat and let it reduce
When you can see it thicken, add the other cup of beef broth
Keep stirring! Let that reduce until it's thick
Remove from heat and put the jam into a food processor
Add salt and pepper to taste
Blend all the ingredients together in food processor
Can be stored in an air tight container for up to 2 weeks in the fridge!
Spread con crackers, toast points, waffles, pancakes or even a burger.
OPTIONAL
You can add 1 Tsp of Cayenne pepper or 1/2 cup of bourbon!
