Bacon Breakfast Roll Ups

We made these delicious breakfast roll ups. Would make a great snack , too! You can alter the ingredients to put in your favorite veggies or seasonings!


  • 8 strips of bacon

  • 3 eggs

  • Onion - about a 1/4 diced

  • Red bell pepper - about a quarter diced

  • 1 Tbsp garlic powder

  • 1/2 Tsp Salt

  • Black pepper to taste

  • 1 or 2 Tbsp of milk

  • Some shredded cheese


  1. Layer/overlap 4 strips of bacon for your first roll up

  2. Make the second one and set aside

  3. Dice the onions and pepper and sautee them in a fry pan

  4. In a small bowl, add the 3 eggs

  5. Add the garlic powder, salt, pepper and milk and whisk

  6. Add the egg mixture right to the pan

  7. Scramble eggs until fluffy

  8. Let mixture cool and then lay on top of your bacon strips

  9. Add cheese to the top of the mixture

  10. Carefully roll up the bacon strips

  11. Lay your roll ups in a fry pan at medium-high heat

  12. Keep turning the roll ups over to cook all sides

  13. Remove once you have your desired level of crispiness

Serve and enjoy!
