Oh boy these are yummy! Great as a snack, appetizer or even a main dish! Here's how you make this super delicious bacon dish....
INGREDIENTS: -8 chicken tenders -8 strips of thin sliced bacon -8 smoked mozzarella sticks
FOR THE GLAZE/DIPPING SAUCE: (FYI - I cut the below measurements in half - just sayin') -2 cups of ketchup -1 cup of tomato sauce -1 cup of apple cidar vinegar -1 Tsp of yellow mustard -1/2 cup of brown sugar -1/2 cup of white sugar
DIRECTIONS FOR THE GLAZE/DIPPING SAUCE: -In a mixing bowl or glass dish, combine the ketchup, tomato sauce, apple cidar vinegar, mustard and 2 sugars. Mix well. -Pour out a little bit of the mix into 2 separate little bowls. One will be for the glaze, one will be for your dipping sauce. -Place your chicken tenders on a cutting board and put plastic wrap over them. -Pound the tenders until they are very flat. -Place the tenders into the bowl /dish with the mix and refrigerate and let sit for at least one hour. -After one hour, pre-heat your oven to 400 degrees. -Remove bowl/dish from refrigerator -Take a chicken strip out of the mix and lay flat on a clean cutting board. -Place a mozzarella stick in the middle and wrap the chicken around it. -Next, wrap a piece of bacon around the entire chicken/cheese stick. -Place on your baking sheet. -Put in oven for about 10-15 minutes, remove and flip strips over. -Remove from oven again , this time flip sticks and glaze them with sauce. -Put back in oven for 5 minutes or so. -If you want to have crispier bacon - put on high broil for the last 90 seconds or so. -Remove from oven, plate them up and serve with the dipping sauce.
OPTIONAL - sprinkle with some freshly cut parsley ENJOY!
