How to Make Bacon Cannoli
So light and delicious! Everyone will love this treat! Here's how you make it; INGREDIENTS: -6 to 12 slices of bacon -2 cups of heavy cream -1/3 cup of powdered sugar -1 Tsp of cinnamon -1 cup of ricotta -2 cups of chocolate chips -A pinch of nutmeg -Maple syrup for a glaze (FYI - I cut this recipe in half) DIRECTIONS: -Preheat your oven to 400 degrees -Take some aluminum foil and fold in half a couple times and roll to create a cylinder -For easier removal of bacon - lightly spray with cooking oil -Wrap a piece of bacon around the cylinder. You can fit 2 - 4 depending on how big a sheet of foil you used. -Place on a baking rack and brush with maple syrup. -Put in the oven for 20 minutes -Start the filling - In a bowl, add the heavy cream, pinch of nutmeg , cinnamon and powdered sugar. -Take a hand mixer and mix ingredients until they become light and fluffy -Then add the ricotta and chocolate chips. (Reserve a small amt of chips) -Whip / mix again until blended After 20 minutes, remove bacon from oven and flip them over. Re-glaze -Put back in oven for roughly 10 - 15 minutes (contingent upon the thickness of your bacon) -Remove when done and let cool. -Put filling in a pastry bag, or use a ziplock bag. Cut a corner of the bag -Fill each bacon shell with the mixture. -Add a couple more chocolate chips on the ends. -Serve and enjoy!
How to Make Bacon Wrapped Meatballs
These amazing meatballs are tender, flavorful, easy to make and delicious! Made with ground beef from Bear Creek Cattle Company! Try them now! Ingredients: -1 pound of ground beef -1/2 onion -1/4 cup of parsley (fresh is better) -1/4 cup of bread crumbs -1 egg -2-3 garlic cloves -1/2 Tsp oregano -1/2 Tsp basil -1/2 Tsp fresh cracked black pepper -1 Tsp salt Directions: -Pre-heat oven to 400 degrees -Line your ice cube tray with bacon slices. Slightly overlap the pieces -Push the bacon into the tray pockets -Dice up your ionion, parsley and garlic cloves -Then mix all of the ingredients together in a bowl with the ground beef -Spoon out the mix and stuff the mix into the ice cube tray pockets -Fold the bacon slices over to cover the mix -Flip the tray over onto a baking dish to remove mix -Bake in over for 20 - 30 minutes -Remove from oven and brush meatballs with BBQ sauce -Bake in oven for an additional 10 - 12 minutes -Remove and place meatballs on a cutting board and slice pieces -Place toothpicks in each meatball and transfer to a serving tray ENJOY

We stopped by PQM - Publican Quality Meats in Chicago as we had tasted their bacon at The Little Goat Diner, also in Chicago. We wanted to check it out! They were very gracious and gave us a bunch of samples to take back home since they were unable to take the time to be interviewed by us. SO, here is our review of PQM's Black Pepper Bacon! Yum!
How to Make Bacon, Garlic Naan & Butter Chicken
Super deliciious and no yeast needed to make this bacon naan bread! Here's what you'll need for the Butter Chicken; -1 pound of chicken -Knob of garlic -1-2 onions -5-6 garlic cloves -6 Tbsp of olive oil -1/2 cup of butter (Ghee is best) -Plus additional stick of butter (unsalted) -2 Tbsp smoked paprika -3 Tbsp tumeric -2 Tbsp chili powder -2 Tbsp corriander -2 Tbsp cummin -2 Tbsp curry paste or powder -i jar or can of tomato sauce -1 Tbsp oregano -3 Tbsp tomato paste -1 cup of heavy cream DIRECTIONS: -Dice up the chicken breast (set aside) -In a food processor, pulse the ginger, garlic and onions. Then puree -In a pot, add the butter/ghee -Then add the tumeric, chili powder, corriander, cumin, curry, smoked paprika. Cook on low/med heat for 20 minutes -After 20 minutes, add the tomato paste, tomato sauce & oregano. Simmer for one hour. Now start on naan bread, here is what you will need; -2 cups of flour -Salt -1 Tsp sugar -1/2 cup of plain yogurt -2 Tbsp oil -1/2 Tsp baking powder -1/4 baking soda -6 slices of bacon -a sprig of cilantro -4 to 5 garlic cloves -bowl of warm water DIRECTIONS: -Fry the bacon, drain on paper towels and set aside -Chop/grate the garlic cloves -In a bowl, mx the flour, salt, yogurt, oil, 1/2 of the garlic you grated/chopped, baking powder and baking soda -Mix the ingredients with your hands until you form a dough ball. -You will need warm water on your hands or a small amt added to mix -Once done - flatten it in your bowl and cover and let sit for 15 minutes, or until it has risen. -Once done, pinch some off and roll it out on a floured surface. -Roll to 1/4 of an inch. Oval shape. Add garlic, bacon that you've crumbled and some of the cilantro. -Roll it again to smash those bits into the dough -Flip it over and rub the other side with warm water. -Put in a hot pan -water side down. Watch for it to bubble -Once it is browned enough on the back, flip over MEANWHILE, after one hour - put your diced chicken into the Butter Chicken sauce you have simmering. Simmer for 10 more minutes. -Then after 10 minutes, add a cup of heavy cream and the stick of butter -Continue rolling out the rest of your naan bread. -Brush each piece with melted butter as they come out of the pan Serve with the Butter Chicken and enjoy!
